docs: relocate agent-facing guidance to AGENTS.md #2

Moves agent-facing content out of README.md per review: the secrets policy (now the full canonical wording in AGENTS.md's repo-conventions section, with a pointer left in README) and the field-test checklist (now its own AGENTS.md section). Removes README sections duplicated by AGENTS.md (repository/workflow, docs pointers). Human-facing content (hardware, build/flash, provisioning table, gate, architecture, behavior notes, status) stays in README.
